3. Combine all the ingredients for the gremolata and serve the osso bucco with a sprinkle of gremolata on top.

Note: This dish goes great with plain cauliflower mash. Make it using my Loaded Cauliflower Mash recipe (see here), but omit the bacon, chives, and cheese. Or leave them in—there’s nothing wrong with having osso bucco on top of a loaded cauliflower mash. It just happens to be quite rich on its own.

pan-roasted spiced pork chops with lemon and sage

When cut and prepared properly, pork chops are among my favorite cuts of the pig. I always judge a pork chop by the fat cap. You want at least a 1-inch fat cap because it keeps the pork moist and flavorful. The only downside of a fat cap is that the chop tends to curl the second it hits a hot pan—which is why I like to score the fat cap all the way down the chop so that it refrains from curling and browns evenly to create a nice dark crust. Not to mention that the fat cap renders faster and quite a bit more when scored, so the chop gets the chance to sit in its fat and gather all that intense flavor while the fat cap gets nice and crispy.
